Vineyard Buffet Kitchen Supervisor
Full Time Position
Schedule may consist of Days, Evenings, Weekends & Holidays
Under the direction of the Executive Chef & Sous Chef, supervise all back of house operations, in accordance with the Company’s Service Standards, applicable Operational and State requirements.
To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill and/or ability required.
- Possess an understanding of offerings; knowledge of all stations, ability to educate guests and associates on products and ingredients.
- Product knowledge to assist guest inquiries pertaining to ingredients and preparation
- Ability to accurately forecast department need when planning production list and menus
- Ensure products are prepared with a consistent, high quality outcome by following recipes, cooking techniques and educating team members on these practices
- Ensure associates are maintaining the overall appearance of the department, ensuring product levels are sustained throughout the day and food is well-merchandised to showcase quality and variety
- Educate associates on recipes and cooking techniques to ensure products are consistently prepared to showcase high standards of quality and guests receive a meal they can’t receive elsewhere
- Assist Sous Chef/Kitchen Supervisor in running the kitchen and managing associates by performing tasks essential to the proper functioning of the department
- Knowledge of product inventory and seek ways to reduce waste by utilizing product in an efficient manor
- Ensure associates properly measures and portion all food items. Complies with all portion sizes, quality standards, department rules, policies and procedures
- Provide instruction on company policies and procedures and ensure proper follow through. Will be responsible in assisting in the selection, training and management of all associates within the Food Service department
- Ensure all associates follow all Food and Human Safety rules and regulations
- Maintain knowledge of departments Union contract
- Ability to deal with frequent change, delays and unexpected events
- Be at work consistently and on time
- Ability to read and interpret written information such as recipes and food abbreviations
- Basic math skills required. Ability to understand, calculate and follow recipe measurements and proportions
- Ability to calculate and convert recipes
- Knowledge of culinary terms and equipment required
- Knowledge of cooking techniques, ability to use and educate others
- Possess culinary knife skills which include safety, sharpening, honing edges and using them for chopping, dicing, julienne and mincing and help in educating others
- Show an interest and aptitude for learning
- High School Graduate/ GED/TASC preferred
- Participation/enrollment in culinary program preferred
- Serve Safe Certification preferred
- Minimum 2 to 4 years’ experience working as a Cook/Cook II
- Minimum of 1 to 2 years of Supervisory experience preferred
- Intermediate computer skills required

- Associate or Bachelor’s degree in Culinary Arts
- Demonstrate the ability to lead others
- Numerous culinary cooking experiences
- Environment:
- Work involves continuous interaction with customers and co-workers in a fast paced environment
- Typical motions include repetitive hand and arm movement, pivoting and twisting. Manual dexterity sufficient to chop, mix, blend, whip etc. a variety of foods and liquids
- Responsible for moving and lifting an average of 25-50 pounds
- Exposure to variable temperatures, odors, noise, steam, refuse and soiled utensils
- May be exposed to various allergens as well as wet and humid conditions
- Standing and walking for up to 4 hours without a break
- Visual acuity to perform kitchen tasks
