Position: Food & Beverage Manager


Established in 1865, The Merion Cricket Club is a premier racquet and dining club in Haverford,
PA. The Club is home to over 2,300 memberships and features athletic programs that include squash, tennis, paddle tennis, cricket, croquet, bowling and other lawn games. Merion’s dining program consists of four à la carte restaurants (including seasonal venues) and a catering facility capable of hosting 350 seated guests. The Clubhouse underwent an $8.5 million renovation in 2007 to include significant improvements to the Club’s multiple restaurants and three (3) kitchens. This has transformed the Club’s primary restaurant into a highly regarded dining facility, and the F&B program will serve over 350 à la carte dinners across all of its restaurants on any given night. The Club is also in the beginning stages of an $18 million renovation and expansion to include the Men’s Locker Room, Fitness & Wellness facility and an outdoor multipurpose recreational Pool facility with a separate Food & Beverage Pavilion.
Merion is well positioned financially as it generates $14 million in gross annual revenues. In 2017, the F&B program will produce over $4.5 million in gross revenues with roughly one-third derived from the Catering Department. The Club serves breakfast, lunch, and dinner seven (7) days per week and is open year-round. The Food & Beverage Manager is supported by a team consisting of a Beverage Manager, Restaurant Manager, and Dining Room Supervisor and reports directly to the Food and Beverage Director.

Food & Beverage Manager Position Overview


The Food and Beverage Manager will be responsible for the Club’s dining services and all food and beverage production among the four dining venues. Plans, implements and monitors departmental budgets. Hires, trains and supervises direct subordinates and applies relevant service excellence standards to assure that the wants and needs of Club members and guests are consistently exceeded. The candidate must be an exceptional communicator who can instill “The Merion Cricket Service Culture” while effectively executing and leading a service team to provide world-class member experiences as this is the Club’s hallmark. Creation and execution of all food and beverage special events as well as overseeing all dining communications to the membership. The Food & Beverage Manager must continue the senior managements’ vision which exemplifies a true member first service culture based upon industry best practices. Qualified individuals must possess a commitment to achieving excellence in all aspects of service and a natural ability to treat members and colleagues in a gracious and respectful manner. Job Knowledge, Core Competencies and Expectations

Skills, Knowledge and Abilities

  •  Excellent communication skills both written and verbal
  •  Basic wine knowledge
  •  Skilled with MS Word, Publisher and Excel, proficiency with Jonas a considerable plus
  •  Ability to supervise subordinate staff, including, but not limited to, assignment of duties, evaluating service, and taking disciplinary action when necessary
  •  Ability to engage with members as well as staff
  •  Ability to prepare and analyze data, figures and budgetary analysis capabilities required
  •  Knowledge of food including its preparation and service
  •  Knowledge of food service techniques and cost controls such as staffing levels, productivity, food costs and other expenses
  •  Working knowledge of federal, state and local laws governing equal employment opportunity and civil rights, occupational safety and health, wage and hour issues and labor relations
  •  Professional appearance and presentation, gracious attitude and the ability to interact with diverse groups while maintaining diplomacy and discretion
  •  A history of personal leadership and sound decision-making capabilities

Salary & Benefits
The Merion Cricket Club will offer compensation appropriate for any combination of accreditation and experience in accordance with a $4.5 million F&B program.
