Assistant General Manager
 
Core Tasks and Timing for Key Responsibilities
 
Work with GM, managers and employees to ensure high performance and profitability while maintaining overall excellence and hospitality throughout each day.
  • Effectively open and close the Shack while maintaining a clean, beautifully maintained Front of House and Back of House.
  • Establish appropriate staffing based on volume and according to needs.
  • Ensure the uncommon excellence of every food item prepared at Shake Shack.
  • Ensure that all employees are completely trained and knowledgeable in all aspects of service according to excellence and hospitality standards.
  • Hold employees accountable for effectively completing their specific job responsibilities according to excellence and hospitality standards.
  • Maintain a positive working experience for all staff to ensure that uncommon excellence and hospitality occurs for all guests.
  • Educate staff on food and beverage from the menu during pre-meal meetings and hands on coaching.
Work with GM, managers and employees to ensure and achieve uncommon excellence and enlightened hospitality within Shake Shack’s brand and culture.
  • Ensure that the culture of Shake Shack reflects the “5 Tenets of Enlightened Hospitality” as stated in the Emplyee Handbook at all times, both during service and off times.
  • In conjunction with other managers, hire, train, inspire and evaluate employees according to practices aligned with Shake Shack hospitality standards.
  • Appraise employee performance as a way to continuously address concerns, resolve problems, counsel or reward.
  • Successfully “on-board” kitchen new hires by ensuring that all kitchen employees understand HR paperwork, practices and policies, etc. before they begin initial training.
  • Actively cultivate and maintain strong, caring guest relationships.
  • Remain constantly up to date and compliant with the correct HR practices and policies within Shake Shack and throughout.
  • Provide continuing education to employees by daily education of cultural and technical aspects of job through pre-meal meetings, etc.
  • Attend Shake Shack continuing education management classes to ensure professional and cultural education.
  • Lead the team and be the voice of the GM when he/she is not at the Shack.
  • Represent the vision of the GM to all managers and employees throughout all interactions with guests, employees, vendors, etc.
  • Make decisions regarding the business that are aligned with the ideals and visions of the GM.
  • Ensure the standards and procedures set forth by the GM are followed and adhere to the standards of Shake Shack.
Ensure that all Hiring and Training procedures and standards are current, followed and compliant, according to Shake Shack standards and local laws and regulations.
  • Conduct 1st and 2nd interviews, making recommendations to the GM for hiring.
  • Provide interviewing coaching to other managers to ensure the culture and standards of Shake Shack are upheld and represented throughout the interviewing process.
  • Ensure that all training materials are current and procedures are followed by management team and
  • other employees.
  • Ensure New Employee Orientations are conducted in a timely manner and follow the guidelines and standards of Shake Shack. Ensure a consistent message that is aligned with the culture and ideals of Shake Shack.
Ensure that all Purchasing and Receiving procedures for all food and beverage products are followed according to Shake Shack standards.
  • Ensure that all products are of a high quality and aesthetic and are stored in a way that optimizes freshness, value and safety.
  • Ensure that all products delivered are matched to a Purchase Order vs. the Invoice vs. what was actually delivered.
  • Ensure the timeliness of product delivery and storage.
  • Responsible for the selection, sourcing and cost-effectiveness of food specials as directed by the Culinary Manager and/or Director of Operations.
  • Responsible for the selection, sourcing and cost-effectiveness of Regional/Local beer program.
  • Establish and maintain valuable relationships with delivery personnel and vendors that maintain Shake Shack as a top-tier partner.
Ensure that all Purchasing and Receiving procedures for all other products are followed according to Shake Shack standards.
  • Ensure that all miscellaneous items are in-house and within guidelines of budget, including, but not limited to: retail, uniforms, office supplies, disposables, cleaning supplies, printer paper, linens/aprons, printed materials, etc.
  • Ensure that all products delivered are matched to a Purchase Order vs. the Invoice vs. what was actually delivered.
  • Ensure the timeliness of product delivery and storage.
  • Ensure that all Accounting procedures and processes are followed according to Shake Shack standards.
  • Ensure that all invoices are processed and entered through MenuLink on a daily basis and/or as received.
  • Ensure that all work/service orders are processed and entered through MenuLink as received, and follow-up is done once per week.
  • Ensure that inventories are accurately processed and entered through MenuLink according to the time standards set forth by Shake Shack and the Accounting Department.
  • Ensure that payroll is processed and completed successfully and correctly according to Shake Shack accounting procedures.
  • Ensure that all employees understand how to access and read their pay information through the HR website UltiPro.
  • Conduct weekly safe and petty cash counts, following all procedures and guidelines.
Ensure that all Human Resources procedures and systems are followed and compliant, according to Shake Shack standards.
  • Ensure that New Hire Paperwork is completed accurately and sent to the Home Office for processing in a timely manner.
  • Ensure that employee reviews are conducted in a timely manner, completed accurately and according to standards.
  • Ensure that all coaching and progressive disciplinary interactions are documented and approached according to local laws and regulation AND within the culture and ideals of Shake Shack.
  • Ensure that all announcements and employee achievements are posted and displayed in a manner that effectively communicates all pertinent information and recognizes achievement.
Ensure all other systems and procedures are followed by managers and staff.
  • Ensure that all managers and employees complete all checklists required to track information regarding cleanliness and guest wait times.
  • Ensure that nightly inventories and prep lists are created and accurately entered.
  • Ensure that all opening, closing and sidework checklists are followed and completed thoroughly.
  • Ensure that all employee schedules are completed and posted in a timely manner according to Shake Shack standards.
  • Ensure that all IT/Operations software and systems are effective, efficient, compliant and integrated throughout Shake Shack.
  • Ensure that all guides and manuals are current and maintained, including: Recipe Binder, Emergency Manual, Preventive Maintenance Guide, Permit Binder and Employee I-9 Binder.
Ensure that all procedures and systems are current and compliant with local Department of Health rules and regulations.
  • Conduct weekly and monthly Health Inspection audits to identify areas of opportunity for compliance and excellence.
  • Develop and foster a valuable relationship with contacts at local Health Department.
  • Ensure that Shake Shack maintains the highest levels of sanitation with excellent scores and minimal violations.
  • Provide continuous education and incentives to employees to understand local rules and regulations and to become “certified” in any available capacity provided by the local Health Department.
  • With the assistance of the Facilities Manager and GM, ensure that the physical plant is maintained at the highest level possible both aesthetically and technically.
  • Manage handyman and/or service personnel to ensure quality and accuracy of work is being completed in a timely manner.
  • Manage employees to effectively clean all equipment and facility.
  • Ensure Preventive Maintenance Guide is current and followed.
  • Audit maintenance contracts and ensure scheduled work is being completed.
