This Advanced Cook position requires an experienced cook with a positive work ethic and general leadership qualities, who is career oriented, creative, and able to work equally well as a team member or independently. The Advanced Cook supervises food preparation and production for breakfast and/or lunch and dinner shifts, and may perform a variety of kitchen management functions, including ordering, inventory control, and assistance in menu planning. In a small restaurant operation, this individual will work equally well as a part of a team or independently.   This individual has least two years of previous culinary experience in a similar restaurant. This individual will have supervisory duties in the chef's absence and will carry out the rules and quality standards set by the Executive Chef, Sous Chef and General Manager.  This individual is willing to pitch in throughout the kitchen to assist wherever needed.

Additional responsibilities include, but are not limited to:

  • Ability to work all stations in kitchen as required
  • Supervise and provide direction for daily operation of kitchen
  • Applies RockResort Standards for quality, service and food & kitchen safety
  • Assist culinary team in achieving labor and food production goals
  • Help assure safe and clean work condition for all personnel
  • Follows directions/specifications of the chef and supervisors
  • Demonstrate teamwork and cooperation with service staff
  • Help the chef maintain all par levels for the kitchen
  • Help to receive food and dry goods for the kitchen and properly account for such deliveries
  • Will prepare food according to standardized recipes and portion controls using proper culinary techniques
  • Inspects food preparation and serving areas to ensure observance of safe, sanitary food handling practices
  • Have ability to manage the outlet during the chef's absence, supervise all stations and operate to standards
  • Provides training and guidance to culinary staff to ensure quality and timely food production
  • Expedites food, solve problems as they arise, and approaches special requests with flexibility
  • Applies a variety of culinary techniques and practices
  • Maintains stock levels throughout day
  • May be responsible for training employees
  • Perform other duties as assigned

Qualifications:

  • Broad knowledge of all culinary styles and cooking techniques - required
  • Practices good personal hygiene, safe food handling and culinary skills - required
  • Ability to lift and carry up to 50 pounds and stand for the duration of the shift - required
  • Positive work ethic - required
  • Ability to communicate effectively - required
  • Must provide Certified Slip Resistant Shoes - required
  • Work all shifts, including nights, weekends, and holidays as needed - required
  • Minimum 2 years of quality cook experience – required
  • Must be fluent in English - required
  • High school diploma or equivalent - required
  • Able to stand for 8+ hours - required
  • Proficient knife skills - required
  • 2 years of previous experience in a restaurant, preferably hotel restaurant - required
  • Supervisory experience - preferred
  • Culinary degree/certification - preferred
  • Must be willing to provide own culinary tools - preferred
  • ServeSafe certification. -preferred
