About this job
Will comply with all authorized and appropriate regulations, directives, standards operating procedures, written and verbal
instructions issued by the air force or client.
ü Cook to order hamburgers, cheeseburgers, salads, grilled ham and cheese sandwiches, eggs to order, omelets, steaks, chops, cutlets and other related items of a short order cook. As well as assistant to Cook II.
ü Prepare the required items in accordance with the production log and directed by shift leader.
ü Wash, peel, chop, dice and slice and otherwise prepare fruits, meats, and vegetables and all general cooking in accordance with
standard recipe requirements.
ü Request subsistence from Cook II.
ü Pan up bacon, sausage and ham for breakfast and mids meals.
ü Setup specialty bars as required. (potato, pasta, fruit, omelet, and hamburger)
ü Work grill during meal period.
ü Garnish food items and serving lines.
ü Use progressive cooking techniques.
ü Check and log refrigerator’s temperatures.
ü Cover, time and date all food items before putting in the refrigerator.
ü Serve food items correct portion and serving utensils using deli gloves when necessary.
ü Check plates and bowls for cleanliness.
ü Replenished food items from food warmers to ensure availability for patrons.
ü Informs back-up cook when items are running low.
ü Keep line free of spills and food debris; use a clean towel and an appropriate sanitizing agent.
ü Check food temperatures during meal assuring temperatures maintains 140 degree.
ü Assure the duties and responsibilities of the shift leader in his/her absences
ü Complies and follows appropriate Food Handlers Safety Components.
ü Use proper customer service techniques.
ü At close of meal remove food from line, put on cart, push it into the kitchen area, cover, time and date.
ü Comply with energy conservation and recycling programs.
ü Other tasks as may be directed by the Project Manager/Supervisor.
MINIMUM
ü Must have High School Diploma or GED.
ü Must have ServSafe Food Handler Certification.
ü Commercial Kitchen Experience.
ü Must Obtain and Maintain a Security Clearance.
ü Must be able to read, write, speak, and understand English.
ü Must be able to Follow Production Records/Prep List.
ü Must be able to Work Independently and Within a Team.
PREFERRED
ü Experience as a cook.
