About this job
The Kitchen Manager position is responsible for managing kitchen and kitchen crew by ensuring all food is prepared in a safe and effective manner according to Freebirds recipes and procedures.

• Grill, prep, and strong knife skills required.
• Understanding of FIFO protein standards and procedures.
• Able to stand for extended periods of time with frequent walking, kneeling, bending, and reaching.
• Must be able to lift, move and carry up to 20 pounds frequently and 50 pounds occasionally.
Work Experience
• 2+ years of industry related experience
• Certified by General Manager and Regional Manager as master of all stations in the back of the house.
Additional Information
Main Accountabilities
• Desire and ability to perform excellent work, and whose constant effort to do so elevates them, their team, and Freebirds.
• Able to train all stations at a high level as measured by recipe cards and training materials.
• Keeps Prep Calculator updated with correct yields and sales information to ensure accurate prep amounts are used each day.
• Responsible for training, managing, and interviewing all back of house staff along with Assistant General Manager and General Manager.
• Completes food orders and receives all deliveries; ensures proper dating and labeling of all food received into the restaurant.
• Ensures all temperature checks are recorded each shift, proper cooling down of food procedures are use, and all waste is entered into the waste sheet.
• Provides input into the performance reviews of all kitchen staff and sits in on tribe reviews.
• Works closely with Assistant General Manager and General Manager to schedule and coordinate cross-training of kitchen crew.
• Identifies future Kitchen Manager candidates within the tribe and works with Assistant General Manager and General Manager to create opportunities for candidates to become a Kitchen Manager.
