Ohana Floor Exhibition Kitchen Pastry Sous Chef:
Job Description
The Pastry Sous Chef for the Ohana Floor Exhibition Kitchen is responsible for the production of all pastry related and some savory product that stems from the Exhibition Kitchen. Together with the Executive Chef and Sous Chef, the Pastry Sous Chef will help to create and deliver exciting culinary experiences for our Ohana. The Pastry Sous Chef will also help maintain a clean, organized work environment that adheres to all safety and food handling requirements. The Pastry Sous Chef reports to the Executive Chef.
Pastry Sous Chef Job Duties:
* Leads kitchen team, along with sous chef, in chef's absence
* Provides guidance to junior kitchen staff members, including, but not limited, to line cooking, food preparation, food safety and dish plating
* Oversees and organizes kitchen stock and ingredients
* Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance
* Keeps pastry related cooking stations stocked, especially before and during prime operation hours
* Manages food and product ordering by keeping detailed records and minimizes waste, plus works with existing systems to improve waste reduction and manage budgetary concerns
* Supervises all pastry production and presentation to ensure quality standards
* Works with Executive Chef to maintain kitchen organization, staff ability, and training opportunities
* Verifies that food storage units all meet standards and are consistently well-managed
* Collaborates with Executive Chef and Sous Chef on menu creation
* Coordinates with kitchen team on supply ordering, budget, and kitchen efficiency and staffing
* Assists in creating memorable food experiences for our Ohana
Pastry Sous Chef Skills and Qualifications:
* Minimum 5 years pastry experience
* Ability to manage people in a respectful manner
* Extensive knowledge of food safety and food handling requirements
* Extensive food and restaurant industry knowledge
* Strong organizational skills
* Flexibility of working hours along with the ability to work within tight timelines when situations pivot
* Attention to detail
* Ability to work in a clean and efficient manner
* Strong verbal and written communication skills
* Guest relations skills
* Must be able to work standing up for hours at a time
* Must be able to lift 50 pounds and carry it at least 20 feet
* Must be able to work in hot and cold conditions
