Scalers are a very important position within the baking process. You will be responsible for pulling all the raw ingredients together to make our breads. Measuring is critical in this position as is attention to detail. Properly rotating ingredients, scaling (measuring) all ingredients according to the recipe will be done through our internal bakery software (don’t worry, we’re going to train you). We’ll also teach you to trace lot codes (very important) and double check your work. Then you can hand off the perfect mix of dry ingredients to the next Team Member in the process.

The Mixer is the 2nd step in the baking process. After being delivered your dry ingredients from Scaling, you will be adding flour, oil, water and any other tidbits that make our breads tasty. We’re going to need you to be able to follow a recipe, take dough temperatures, read and understand a mixing procedure. Because our mixing bowls hold 250 lbs. of dough, you’ll also need to be comfortable lifting 50 lbs. of that dough into a hopper consistently. After you get the hang of this, you’ll know what makes the best consistency for running it through our equipment.
