CONDITION OF EMPLOYMENT:

New employees of the Department of Military Affairs will be required to pass a pre-employment drug screening and background screening. Certain positions will be required to maintain a valid Driver's License.

LICENSURE/REGISTRATION/CERTIFICATION REQUIREMENTS:

Must have valid driver's license.

OTHER JOB RELATED REQUIREMENTS FOR THIS POSITION:

Must have a High School Diploma

One year of food service/ preparation experience

Incumbent may infrequently be exposed to aggressive/hostile at-risk youth and/or upset parents/guardians.

DUTIES AND RESPONSIBILITIES:

WORK LOCATION: CBJTC - STARKE, FL

Estimates food requirements for preparation of meals.

Prepares variety of hot or cold food items according to menu, recipe and production work sheets.

Places food on serving lines and replenished as needed during each meal period.

Properly handles and refrigerates leftovers by using proper sanitary guidelines.

Follows state and facility safety procedures in the operation of food preparation equipment.

Follows state and facility sanitation procedures in the cleaning and maintenance of food preparation equipment and working areas.

Maintains proper safety temperature controls on all food items served.

Maintains accountability of food items prepared and in storage areas.

ENTRY LEVEL KNOWLEDGE, SKILLS AND ABILITIES: (Note: The knowledge, skills, and abilities (KSA's) identified in this class specification represent those needed to perform the duties of this class. Additional knowledge, skills, and abilities may be applicable for individual positions in the employing agency.)

Knowledge of food preparation principles, practices, and techniques.

Knowledge of food sanitation principles.

Ability to operate food preparation equipment.

Ability to read and follow detail instructions, recipes and production work sheet.

Ability to work with kitchen helpers in a variety of tasks.

Ability to provide customer service during the serving of meals.

Ability to communicate effectively.

Ability to establish and maintain effective working relationships with others.

Ability to perform physical activities to include use of arms, legs, hands, and feet. Lifting, bending and handling equipment and supplies.

Ability to stand for long periods of time.

Ability to handle extreme heat and cold temperatures (stoves, freezers).
