A Day In The Life Of A PM Assistant Manager For The S&D Companies

 

Time

Activity

2:00 PM*

Arrival

  • Arrive at the restaurant.  As you are driving in to the lot, observe a “broad brush” view of the premises, parking area, and landscaped areas.  Park in an area that will not interfere with guest parking.

2:00 PM -2:30PM

Complete the daily opening travel path and pre shift checklist

  • Exterior first, then interior.  Handle urgent items on the spot.  Note items that can be assigned to employees throughout the day. Take the Redbook with you.
  • Check in with the restaurant manager and review the material in your mailbox.

2:30PM -2:35PM

Greet Today’s Staff

  • Check staffing vs. schedule.  Talk to crew about today’s expectations (speed of service goals, new products, position changes, GSS, etc.).
  • Check the daily communication log as well as the red book; and verify that the previous days MSS, rush ready checklists, and control logs were completed. Use the communication log in the Redbook to drive results.
  • Notify manager of any reoccurring issues with Redbook, worksheets, MSS and share critical information others need to know.

 

2:35 PM- 3:00 PM

Cover Breaks

  • If afternoon employees haven’t had a break please give them a 10 minute break.
  • Ensure crew members are ringing out their meals including beverages that they already consumed.
  • Check start times of crew members breaks, and ensuring they are returning on time. Verify that the policy for meal breaks is followed.

 

2:00 PM – Close

Lead Floor During Day Part 4, 5 &6

  • Talk the crew “into position”, about areas to focus on (speed of service, GSS, new marketing window, upselling, waste control, assisting a new trainee, or any other specialized topics pertinent to the day).   Set shift goals.
  • Run the floor with headset on “directing traffic” to ensure the optimal guest experience.  Talk crew “through position” about areas to focus on.
  • Get crew going on the afternoon worksheet
  • Complete the bagel pull and adjust the pull for the previous day. 
  • Count, record and discard all bagels from the first bake.  Merchandise the second bake. 
  • Consolidate cases.  Use a blocker and the shade to make the case look full.  There cannot be any empty spaces.
  • Fill out the speed of service chart and communicate the results with the team.
  • Complete the daily control logs at 6:00PM and close.
  • Verify that each task on the worksheet is completed before crew members leave for the day.
  • Complete the evening shift checklist.

 

 After 7:00 PM

MSS

  • Complete the MSS tasks for the day and sign off on the MSS worksheet. Remember “guests come first”.
  • Use the communication log to inform the manager of any items of importance.

 

9:00 PM or 1 hour prior to close

Preparing to close

  • Pull counter drawer.  The employee signed into the drawer is responsible for cashing it out. 

Close (Our closing time is posted and we must honor it)

Closing

  • Clean and return all dishes to the station
  • Cash out the cash drawer.
  • Discard all products and make note of excessive iced coffee waste in the communication log. You may take home a reasonable amount of product that will be discarded.  Do not package product for take home at any time prior to close. 
  • Complete the closing travel path

 

Daily

 

 

 

 

 

  • Count and record all product 5 minutes before closing and calculate totals. 

 

  • Hold all staff members accountable for delivering an exceptional guest experience and for meeting the standards set forth by the S&D Network and Dunkin Brands, Inc. 

 

  • Check dress code on all employees as they arrive to work.

 

  • Is the restaurant left in the condition that sets up the morning shift to be fully prepared to meet the needs of our customers during the peak hours?

 

  • Work together to serve every customer. 

 

 

 

 

 

 

**Departure time is dependent on your capability and capacity to complete all assigned tasks in the suggested time frames.  Experience has shown that a focused, well organized PM assistant can get the job done during their scheduled shift.  Some days may be shorter or longer based on your individual skill set, experience, business needs, drive and desire.  There can be unforeseen circumstances that affect a given day that may affect your scheduled arrival and departure time.  

Requirements

The hours are from 2:00PM to 9:30 PM.    

$12.00 plus tips, paid vacation, 50/50 health, 50/50 dental, 401K, and opportunity for advancement.
