Overview of Role

Role:
The Production Quality (Kitchen) Leader is a leader who works in the kitchen and is responsible for leading and overseeing the total quality of kitchen production and its interaction with Catering, Front Counter and Drive-Thru leadership. In low volume situations, this leader may frequently fill a production position.

Knowledge:

  • Food safety expert (ServSafe certification)
  • Expert in all areas of the kitchen (score at least 90% on all kitchen tests)
  • Often able to speak/communicate in languages other than English (Spanish, Brazilian Portuguese, Haitian Creole, Albanian or other languages)- (not required)
  • CFA Anywhere Online Learning Course expert

Responsibilities
Some responsibilities may be shared by other leaders as determined by the Operator.

Oversee Kitchen Operations:

  • Provides vision and accountability for OE to kitchen team members
  • Responsible for schedule and set-ups for kitchen crew (open to close)
  • Run breaks during shifts (if not handed off to kitchen supervisor)
  • Ensure kitchen/Restaurant is opened/closed properly
  • Manage chicken rotation (including chicken tracking system)
  • Manage chicken cool down process
  • Oversee CFA Anywhere orders and collaborate with delivery staff to ensure quality catering
  • Conduct regular meetings with kitchen staff

Ensure Policies and Quality/Standards Are Upheld:

  • Ensure Restaurant adheres to Vendor check-in policy
  • Ensure Team Members adhere to holding times and timers for all food products
  • Be responsible for taking temperatures of each product, each shift (in addition to RQA)
  • Ensure RQA program is fully implemented
  • Follow up on RQA, ROE and CEM findings and track trends
  • Check temperatures of freezer and refrigerator regularly during shifts
  • Follow up on health inspection findings, and implement necessary changes

Maintain Stock and Place Orders:

  • In charge of Restaurant inventory
  • MBM truck
  • Oversee administration of the KIV and all inventory management processes
  • Bread
  • Produce
  • Chick-fil-A Warehouse

Maintain Equipment/Kitchen Supplies:

  • Manage equipment repair and maintenance schedule
  • Maintain rigorous cleaning schedule for kitchen areas and equipment (vent hoods, etc)
  • Ensure all tools are available and maintained to meet requirements
  • Small wares
  • Knives

Maintain Systems:

  • HACCP Plan for chemicals and hazardous substances
  • Kay chemical station or other cleaning chemicals programs

Communicate with Other Leadership:
UTC – Training:

  • Make sure Quality Photos, recipe cards, CFAA cards and Sampling cards are accessible at all times
  • Communicate training needs and progress to UTC
  • Work with UTC to create implementation plan for new product rollouts
  • Help certify trainers for kitchen (Boards, Breading, Adv. & Basic Food prep)

UMD – Marketing:

  • Strategically partner with the UMD to ensure our unique asset of FOOD is fully leveraged

Ensure Profitability by Monitoring (or working with Profit Champion):

  • Food cost
  • Paper cost
  • Labor cost
  • Cleaning Supplies (and working with Restaurant leadership about proper use of cleaning resources)

Influence Culture of Continuous Improvement:

  • Create culture of “continuous improvement” in kitchen (no shortcuts)
  • Communicate operational improvement ideas to Operator/BC/corporate office (feedback loop for CFA, Inc.)
  • Engage in regular best practice visits to other Restaurants
  • Frequently visit QSR competitors to critique food
  • Receive ROE quarterly report and diagnose areas for improvement
  • Receive quarterly RFI/CEM report and diagnose areas for improvement
  • Track speed of service reports to determine areas for improvement

Act as the “Go To” Person for Kitchen Issues:

  • Food recalls (as communicated by the home office)
  • Local issues (problems with water, etc.)
  • Adjustments to recipes due to shortage (fruit, etc.)

Hours:

  • 40-50 hours per week
