Hospitality Confidential is pleased to present a new seasonal sous chef role in Nantucket! This independently owned and casual high-volume eatery has been in business for decades and is a family favorite and tourist staple on this famous coveted island destination. Ownership is seeking an experienced, high-volume sous chef to work the high season which lasts 26 weeks approximately from May 1 to October 17th. This is a wonderful opportunity to spend time in a beautiful vacation destination with competitive pay and housing provided. Job Responsibilities:

  • Report to the Executive Chef with a dotted line to Ownership.
  • Oversight of kitchen operations for a 200-seat restaurant serving lunch and dinner 7 days a week.
  • Oversight of running and maintaining the production of the kitchen and its staff.
  • Sharing responsibility for training, inspiring, mentoring, and encouraging a staff of approximately fifteen.
  • Assisting in planning and executing exceptional seasonal menus as well as take-out menus.
  • Engaging and building strong relationships with all food and other vendors.
  • Maintaining accurate inventories and receiving deliveries with accuracy and accountability.
  • Collaborating with the Ownership and Executive Chef to constantly improve, develop, and evolve culinary and general operations. 

Qualifications:

  • 2+ years of experience in a Sous Chef or Kitchen Manager role within a similar seasonal high-volume environment or related experience in a high-production kitchen.
  • Knowledge of all working stations: Grill, Broil, Fry, Saute, Salad, Dessert, Shucking (Oysters, Clams) and Dishwashing.
  • Natural Leadership traits: Resilient, mature, respectful, energetic, ambitious, self motivated, and full of integrity.
  • Passionate about culinary excellence and mentoring others.
  • Ability to lead and work as a team player with a sense of urgency and attention to detail.
  • Ability to communicate (verbally and written) in a clear, concise, thorough manner.
  • Ability to Expedite in a high-volume kitchen.
  • Ability to work a 6-day work week / up to approximate 8-hour shifts. 

 

We Would Love:

  • Spanish speaking abilities would be greatly appreciated but are not required.

 

Compensation & Benefits:

  • $45k - $49K base salary (for a 26-week season)
  • Discretional End of Season Bonus
  • Travel Covered to Nantucket before the season and back home after the season
  • Shared employee housing with a private bedroom (valued at $12,000)
