ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Assist in selecting, training, supervising, developing and counseling associates in the kitchen
  • Coordinate and participate in the activities of the kitchen staff
  • Supervise and engage in the preparation and cooking of menu items to ensure proper presentation and high quality as well as efficient and profitable food service
  • Ensure proper portion control is maintained
  • Direct and participate in planning menus
  • Direct and participate in the proper utilization of food surplus and leftovers
  • Schedule kitchen staff according to business needs
  • Assist in maintaining inventory; prepare requisitions for food and non-food items nessesary for operations after estimating food consumption
  • Oversee production of banquet food operations
  • Assist the Executive Chef in implementing policies and procedures governing operations involving the banquet kitchen and food servers
  • Maintain the kitchen work areas in a clean, neat manner and ensure thorough sanitation of work area upon completion of daily tasks and throughout the day in accordance with local, state and federal laws and the policies of the hotel
  • Ensure the correct use of all equipment in the area of responsibility, including knives, for the safety of self and co-workers
  • Assist in keeping daily temperature and refrigeration logs
  • Assist in ensuring the daily dish-up service is coordinated and performed properly and according to BEO specifications
  • Assist in notifying the Stewarding Department of any late clean-up jobs
  • Ensure the kitchen area is properly broken down by checking all equipment, storage areas and work spaces
  • Perform special tasks as requested
  • Maintain a high level of professional appearance, demeanor, ethics and image of self and subordinates
  • Continue professional development of self and subordinates


REQUIRED KNOWLEDGE, SKILLS AND ABILITIES

  • Familiar with Banquet operations
  • Knowledge of food preparation, presentation and portion control
  • Knowledge of purchasing, ordering and receiving procedures
  • Knowledge of food and labor costs
  • Knowledge of inventory controls
  • Knowledge of Chef Tech software helpful
  • Familiar with Microsoft Word and Excel
