IDEAL CANDIDATE:

PRINCIPLE RESPONSIBILITIES:

  • Prepare each day according to shift and station assignment. Prepping and Cooking all food items necessary for a successful meal service according to prep sheets including but not limited to sauces, soups, proteins, set up and or any other items associated with daily menus. Shift assignment may include opening the kitchen at 5 am or closing down the kitchen at 12midnight based on Renaissance Charlotte Suites scheduling needs and guest service requirements
  • Arrange and organize the line, sandwich units, steamtable, speed racks and coolers to facilitate meal period cooking and service
  • Learn all menus, recipes, preparation and presentation standards according to Renaissance Charlotte Suites Hotel standards
  • Prepare all orders as turned in by service staff or according to EO instructions. Ensure all orders are prepared accurately, within required time period, leaves kitchen in peak condition.
  • Prepare all foods required by other kitchen departments which are best suited for current department which includes but not limited to; the next shift and following day preparation as required and directed by Manager or Supervisor
  • Observe and test visually, taste, touch and smell all foods to determine product quality and presentation according to Renaissance Charlotte Suites Hotel standards
  • Cook only sufficient food in advance to cover expected buffet volume, ala carte cooking is essential to maintain quality
  • Maintain the work area, including but not limited to end of shift daily cleaning or closing kitchen cleaning duties, counter tops, utensils, equipment (ovens, char-broiler, griddle top, salamander, fryers, steamtables, etc.), refrigeration, walls, floors in a clean and sanitary condition in accordance with Atrium Hospitality, State and County health guidelines to include work safety regulations
  • Ensure all foods (raw, cooked, perishables, assist with deliveries) are stored in proper containers, at proper holding temperatures, labeled and dated in proper rotation and according to Atrium Hospitality, State and County health guidelines
  • Inspect and clean food preparation areas such as but not limited to; equipment and work surfaces, serving areas, to ensure safe and sanitary food handling practices
  • Follow Company Safety and Security policies and procedures. Report accidents, injuries and unsafe conditions to management, complete all safety training and certifications
  • Other duties as assigned by Manager or Supervisor


Requirements:

EXPERIENCE/SKILLS REQUIRED:

To execute this position effectively and successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill and /or ability required.

Job Skill Requirements:

  • Must be able to prepare food products utilizing standardized food preparation techniques
  • Skillfully use hand tools or machines needed to complete tasks following culinary terminology. Measure , cut, or otherwise work on materials with precision
  • Use arithmetic or shop geometry to calculate amounts of product required to complete assignments, dimensions followed and cost of materials
  • Must have ability to listen, follow instructions, ask questions to perform assigned tasks with limited supervision
  • Read recipe of item to be prepared, produce utilizing basic culinary techniques, accept responsibility for accuracy and outcome of completed product
